I’ve made a lot of gluten free pancakes. Some have been pretty good, but these…these were amazing.
I think it was partially due to the fact that I used gluten free all purpose baking mix instead of flour. Also, I used coconut oil on the griddle instead of my normal non-stick spray which made them crispier on the outside while they stayed fluffy on the inside (not usually a description associated with anything ‘gluten free’!)
But what made them even more amazing of course was when the kids drew their pumpkin faces on them

Serves 6-8
Ingredients
3 C. All Purpose Baking Mix (gluten free)
2 1/2 C. Coconut Milk
2 C. Pumpkin Puree
2 eggs
2 Tbsp Vanilla
2 Tbsp Honey
1 Tbsp Baking Powder
2 tsp Cinammon
2 tsp pumpkin pie spice
dash of salt
Directions: Mix all ingredients well. Preheat your pan/griddle. Melt about 1 Tbsp coconut oil. Spoon or ladle the mix onto your pan. Flip when you see bubbles on top!
Tip: I can never make enough pancakes at once so if I want my family to all eat together I put the cooked pancakes in a warm oven (~175) until the whole batch it made!
