Oh beloved crock pot, I do love you so.
I don’t use mine nearly enough simply because I haven’t found enough yummy gluten free recipes but when I stumbled across crock pot loaded baked potato soup on Pinterest I knew I hit the comfort food jackpot.
So I made it. And it was delish.
This easy peasy recipe can be found over at ‘It’s what’s for dinner‘. I changed up just a couple of things:
- I didn’t have the garlic mix that she had listed so I used fresh garlic. Holy moly did I ever. It’s okay, I’m married and he likes garlic too 🙂
- Just a tip to make your life easier when it’s ‘soup season’ – buy your broth in base form! This particular base from Orrington Farms is delicious, easy to store and gluten free. It saves room and you can customize how much you need each time you cook. Perfecto.
Lastly, my other must have when making soups is this immersion blender. Love love love it.
You don’t have to move your ingredients from the Crock Pot and it’s so much easier to clean than a blender or food processor. It takes this:
and turns it into this in no time!
This recipe was as good as it sounds. There is a bit of prep with the peeling and chopping of potatoes but I would still consider it an easy recipe well worth trying.

That looks yummy! I like to make a beef stew. I use a very exact measurement ingredients… well, sort of… well, some of them..
a pound or so of beef chunks
a can of stewed tomatoes
a large onion, or maybe 2 mediums
a few potatoes – cut to about 1 1/2 inch chunks
At least 6 carrots – I like there to be a nice color distribution between the veggies – and I cut them on an angle in decent sized chunks (maybe an inch) to retain their flavor
A large can of mushrooms, or enough fresh to sprinkle across the entire width of the crock pot
A splash or two of steak sauce
cover about half a soup spoon with Beef Base
Pepper
salt
cover with water
Because it is fairly filled with chunky ingredients at the beginning, it takes 10-12 hours to finish. When the veggies are close to soft “enough”, I put a couple handfuls of quick Barley in – this thickens and adds such a hearty quality to it that I just want a blanket, a comfy chair and my bowl of soup.
When the potatoes, carrots & barley are done… It’s soup time.
