Oh how I love me some ultra-crispy potatoes.
I haven’t actually had much luck making them but I do love to eat them when I find them!
So when I came across this recipe on Pinterest it was a given. Pinned it.
When you read the list of ingredients, don’t be afraid. I realize most of us don’t have duck fat handy (nor do we want to have it handy)…but when you read his notes you can see that Olive Oil is an acceptable substitue so that’s just what I did.
And they were gooooood.
Also acceptable for a substitute is bacon fat, yum. Next time. I’m also thinking parmesan coated…
These aren’t the fastest potatoes to make but the result is well worth it. I’ve seen recipes where you have to prep the potatoes the night before so in comparison this one is easier.

I make these all the time. I just use olive oil and lots of italian seasoning, garlic powder, red pepper flakes, salt and pepper. You could also do them with bacon and parm – YUM. The best ever was with a bunch of whole garlic cloves. It seasoned the potatoes and roasted the garlic which was delish!!
