I found the recipe on Pinterest and followed the link to this site. If you are doing the Paleo diet you will love all of the recipes!
Just slice up 3 large or 4 small apples. Cover the bottom of your crockpot with some of the slices and sprinkle with cinnamon. Cut slits in your pork loin (about halfway through) and drizzle honey in each slit. Then fill each slit with an apple slice.
Put it in the crock pot, drizzle with more honey, cover with remaining apple slices and sprinkle with more cinammon.
Cover and cook for 6-7 hours depending on your Crock Pot. Ta-Da!!
I served ours with french beans.

Desiree – I didn’t…the juice released from the apples was enough!
Might have been my roast but the meat was very dry. The apples were yummy though.

I love to tweak recipes a bit, so I made a glaze of equal parts honey, mustard, and molasses (about 1/4 cup as my pot and roast were small) to pour over the meat before cooking. I also added half an onion chopped, and some craisins. Blended that mixture after cooking to spoon over each serving. Accompanied with acorn squash and a nice salad. Perfect Fall dish!

What temperature on the crockpot?
Suzi I’ve found that my crockpot cooks really hot so I had it on a medium setting. I can never cook on high with mine – it would dry everything out!
The flavors were great but mine was dry as well. I think someone else had mentioned that. Maybe cook it on low for longer??
