Oh beloved crock pot, I do love you so.

I don’t use mine nearly enough simply because I haven’t found enough yummy gluten free recipes but when I stumbled across crock pot loaded baked potato soup on Pinterest I knew I hit the comfort food jackpot.

So I made it.  And it was delish.

This easy peasy recipe can be found over at ‘It’s what’s for dinner‘.  I changed up just a couple of things:

  • I didn’t have the garlic mix that she had listed so I used fresh garlic. Holy moly did I ever.  It’s okay, I’m married and he likes garlic too 🙂
  • Just a tip to make your life easier when it’s ‘soup season’ – buy your broth in base form!  This particular base from Orrington Farms is delicious, easy to store and gluten free.  It saves room and you can customize how much you need each time you cook.  Perfecto.

Lastly, my other must have when making soups is this immersion blender.  Love love love it.

You don’t have to move your ingredients from the Crock Pot and it’s so much easier to clean than a blender or food processor.  It takes this:

This recipe was as good as it sounds.  There is a bit of prep with the peeling and chopping of potatoes but I would still consider it an easy recipe well worth trying.
