Sometimes I like quinoa, sometimes not so much.  To me, if it’s not made with something very flavorful then it’s a little too ‘earthy’ tasting.  So I was a little nervous to try this one but I figure anything with ‘cheesy’ in the title was worth pinning.

Turns out, this one was worth it.  Yum

Here’s what I did different:

-Instead of bread or Panko crumbs I kept it gluten free by crushing up some taco shells and using that instead

-I cut up fresh tomatoes to top it with and used yogurt instead of sour cream

I will probably add more cheese next time but otherwise two thumbs up for this one.
