Grandma Jenean should have been a chef.  It’s not just that she loves to cook but she loves to create dishes and her palate is never wrong.  For her latest grandchild’s baby shower  one of the dishes she made was Curry Chicken Salad served in lettuce cups. This is a perfect dish to serve for a brunch, a baby or bridal shower…or if you’re a fancy pants like I pretend to be you could make it for a picnic in the park.

(serves 4-6)

Ingredients:

1 C mayo

3 Tbsp pineapple juice

2 Tbsp curry powder

1/2 tsp Salt

4 C. cooked, cubed/chopped chicken

2 stalks celery – sliced thin

1 (15 oz) can pineapple tidbits (drained)

1/2 C. sliced almonds

1 apple diced (not peeled) -OR-  1 C. halved grapes

Parsley or Cilantro (for ‘pretty’)

 

Directions

Mix all ingredients together in a bowl.  Top with parsley or cilantro and serve with crackers, on bread/roll as a sandwich or in lettuce cups (hearts of romaine or butter lettuce work well!).
